TANDOOR….Indian Villagers still cook with the traditional clay ovens,
called tandoors, which are fed with charcoal or firewood. This imbues
the food with a special smoked flavor. The meats and breads are cooked
at a high temperature in the dome-shaped tandoor, often reaching 600
degrees Fahrenheit. This locks in all flavor and juices, baking food to
perfection. Served with naan bread, tandori foods are gourmet delight
for the health conscious. |
